In solving the problem of raw material processing in traditional meat products in China, some technological equipment, such as hair removal technology and equipment, have made significant breakthroughs in this field. In the late 1990s, meat processing machinery and equipment enterprises underwent a new round of expansion, construction, technological transformation, and equipment updates on the basis of restructuring. Every year, industrial investment exceeds 10 billion yuan, mainly focused on technological progress in slaughtering and processing.
There were poultry slaughtering lines first, followed by pig, cattle, and sheep slaughtering lines, but imported equipment accounted for a large proportion. For example, poultry slaughtering and processing have introduced fully automated production lines such as slaughtering, dehairing, cooling, weighing, and specification division. The production capacity, scale, and technical equipment level of animal slaughter and processing are gradually approaching the level.
While introducing advanced foreign equipment, domestic machinery factories began to digest and absorb it, imitating imported equipment, and then developing it themselves. In 2004, more than 60 meat processing machinery factories in China were able to produce most of the Western style meat processing equipment, which basically met the production process and hygiene requirements of general meat processing factories. In recent years, the gap in domestic meat processing machinery and level has further narrowed, and complete sets of technologies and equipment such as cooling meat processing have achieved significant breakthroughs. The export volume continues to grow, with an increase of at least 25%, and some equipment even enters the German market with advanced meat machinery.
